1 c. shortening
1 (#303) can pumpkin
3 1/2 c. flour
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
1 tsp. allspice
3 eggs
1/2 c. plus 2 tbsp. Sweet Low or
Sugar Twin
1 tsp. baking soda
1 tsp. nutmeg
1/2 c. chopped nuts
To make this with sugar use 2 1/2 cups sugar instead of Sweet Low. Mix
shortening, eggs and pumpkin. In separate bowl combine dry ingredients and add
to pumpkin mixture and blend well. Add nuts and stir. Pour into 2 greased and
floured loaf pans and bake at 325 degrees for 1 hour. Let cool before removing
from pans.
